Fennel and Mandarin Orange Salad

Easiest salad ever. I ran a fennel bulb over our new mandoline to get thin, even slices, then threw in two little packs of mandarin oranges (without the juice). Olive oil, rice wine vinegar, salt, pepper, and a few chopped fennel fronds were the only other ingredients and it was heaven.
